Chicken and Rice Casserole
Ingredients
2 packages of frozen pea's and carrots. | 6 cups of diced cooked chicken or the meat from one whole roasted chicken.
1 medium onion diced and sauteed. | 4 small cans of diced mushrooms.
1 large can of cream of mushroom soup. | 2 cups of mayonnaise. | 6 cups of long-grain and wild rice (cooked).
2 cups of grated sharp cheddar cheese. | 1 pinch of salt. | 3/4 tsp pepper. | 1 tsp garlic powder.
Preparation and Cooking time 45 minutes.
Directions
Preheat the oven to 350 degrees.
Mix all the ingredients together and pour into two greased 3-quart casserole dishes.
Bake for 20 - 25 minutes or until bubbly.
Yield: 20 cups of casserole. (Usually makes one large and one small casserole)
