Chicken Cream-Cheese Enchiladas
Ingredients
4 cups cooked, shredded chicken. | 1 tablespoon, fresh minced garlic. | 1/2 small onion, finely chopped.
2 packages (8oz) of cream cheese. | 6-8 tortillas (8 inch) | 2 cans of enchilada or green chili sauce.
Preferred amount of shredded cheese.
Preparation and Cooking time 1 hour and 30 minutes.
Directions
Preheat the oven to 350 degrees.
In a medium-sized bowl, combine the chicken, garlic, onion, parsley and cream cheese. Lay approximately 1/4 cup of mixture on the flour tortillas and roll. Then place the enchilada seem side down into a casserole dish. Then top with enchilada sauce (we prefer green chili sauce) and shredded cheese. Bake for 25 minutes, or until the cheese is melted and bubbly.
Yield: 6 to 8 enchiladas or 1 pan depending on the size.
