Omega Omlette

Ingredients
3 eggs | 3/4 cup grated sharp cheddar cheese | 1/3 cup sour cream | ¼  cup taco or picante sauce
2 tablespoons butter | ½ cup alfalfa sprouts

Cut the following into bite size pieces: ½ avocado, 1 tomato, 4 - 6 white mushrooms ¼  cup onion (if desired)


Preparation time: 15 - 20 minutes.

Directions
    Chop vegetables and set aside.  Add onion to pan of the melted butter, sauté 2 minutes on med high.  Then add the mushrooms, sauté another minute. Add tomato and avocado heating them another minute gently moving them around. Lower stove to med - low heat. Add eggs (slightly beaten) and gently move eggs and vegetables around until starting to set. Plop on sour cream by spoonful, sprinkle on taco sauce, then the cheese and top with the sprouts. Cover pan for 2-3 minutes and serve.
