Shrimp Quiche
Ingredients
1 ¼ cups shredded Monterrey Jack Cheese | 2 cups cream (could use ½ & ½ ) | 4 eggs
1 teas salt | 1/4 box frozen chopped spinach (unless you want more) | 1 cup small fresh shrimp | 1 pie shell (better if homemade)
Preparation time: 15 minutes (more if you make the pie shell from scratch)
Bake time: 45 - 60 minutes
Directions
Cook spinach and let drain on paper towel. Preheat oven to 425. Prepare pie shell. Sprinkle grated Monterrey Jack cheese into pie shell, spread evenly. Sprinkle on shrimp evenly. In a bowl, slightly beat the 4 eggs and add the cream and salt. Then stir in the spinach, (first blotting out all the excess water you can). Pour evenly onto the cheese and shrimp. With a spoon, carefully move cheese, here and there, to allow egg mixture to combine with cheese slightly. Bake at 425 for 15 minutes, then lower oven to 300 for 30 - 45 minutes, check by gently inserting a knife 2" from the edge, when it comes out with no egg mixture sticking to it, take out and let sit for 10 more minutes.
